Jump to recipeCold pressed groundnut oil has a soft, nutty taste that does not take over the food. It is an easy oil for the everyday tawa. It contains peanuts, so please take care if you have a peanut allergy.
Five everyday uses
- Parathas. A little oil on the tawa is enough. The nuttiness sits well with ajwain or a plain aloo paratha.
- Aloo sabzi. Start the sabzi in a spoon or two of oil, with cumin, and the potato stays the main flavour.
- Pakoras. The recipe card below is a simple aloo pakora. Groundnut oil is a steady frying oil for snacks.
- Peanut chikki. Warm jaggery, stir in roasted peanuts, and use a lightly oiled spoon so the mix does not stick. Let it set, then break it.
- Stir-fried vegetables. A spoon of oil, mustard seeds or cumin, then whatever vegetable is in the fridge.
A note on frying
You do not need a deep kadhai full of oil for the pakoras above. A shallow layer is enough if you turn them.
Recipe
Serves 3 to 4 · Time 30 minutes
Ingredients
- 2 medium potatoes, boiled and crumbled
- 2 tablespoons besan (gram flour)
- 1 green chilli, chopped
- A small handful of fresh coriander
- Salt, to taste
- Cold pressed groundnut oil, for shallow frying
Method
- Mix the potato, besan, chilli, coriander and salt. Add a spoon of water only if the mix will not hold.
- Heat a shallow layer of groundnut oil in a kadhai or pan.
- Drop spoonfuls of the mix into the oil. Fry until both sides are golden.
- Drain on a plate and eat hot, with chutney if you like.
