Til ka tel has a warm, nutty aroma that you notice even in a small spoonful. Cold pressed sesame oil keeps that smell. It contains sesame.

Where it fits

A teaspoon is often enough in a chutney tempering. Heat the oil, add mustard seeds, dried red chilli and curry leaves, and pour it over coconut chutney.

For podi, mix roasted lentil powders with salt and a little sesame oil so it clumps lightly. It keeps in a jar if the spoon stays dry.

A quick noodle toss, in the recipe card, is a weeknight way to use the bottle. Salad leaves take a few drops with lemon and salt.

Storage

Close the cap. Keep the bottle away from the stove and out of direct sun.

Recipe

Serves 2 · Time 20 minutes

Ingredients

  • 150 g noodles, cooked and drained
  • 1 tablespoon cold pressed sesame oil, plus a little extra
  • 1 small onion, sliced
  • 1 carrot, cut into thin strips
  • 1 teaspoon soy sauce or salt, to taste
  • A pinch of pepper
  • 1 teaspoon white or black sesame seeds

Method

  1. Heat the sesame oil in a pan. Add the onion and carrot and cook until the onion softens.
  2. Add the noodles, soy sauce or salt, and pepper. Toss for a minute or two.
  3. Take the pan off the heat. Add a few extra drops of sesame oil and the sesame seeds.
  4. Taste, and add salt if it needs it.
